The project begins with an apparently simple question: how much oil comes out of one olive tree?
When professional pressing of the olives from a single tree proved impossible, I carried out a manual, domestic pressing process. Everything normally discarded was kept: solids, liquids and residues. The resulting oil was calibrated and certified with the greatest possible precision.
Measurement is both the objective and the problem: answering exactly how much one tree produces also means accounting for everything that the process generates.
